So while I'm dealing with that, husbeast is taking care of cooking. Tonight he's made me mushroom perogies on top of sauteed smoky tempeh, mushrooms, and spinach. πŸ˜‹ . Not to worry! I'm keeping up on anti-inflammatory goodness, gentle movement, and got a last-minute session with my chiro this afternoon and already starting to feel better. 😊 . Who loves simple meals for their Monday nights? πŸ™‹β€β™€οΈπŸŒ½πŸŒΆπŸ₯‘ . This meal was the result of wanting something tasty and nutritious with minimal prep. πŸ˜‹ . I make a lot of bowls and being able to just throw stuff together without spending extra time chopping, peeling, or otherwise getting ingredients ready before the cooking even starts πŸ˜₯ is great for those stressful days. . This burrito-type bowl came together quickly once the grains and lentils were cooked. . In the pan 🌽 frozen corn β€’ jarred spicy tomato sauce β€’ shallot β€’ handfuls of leafy greens β€’ chili powder 🌢 (sound on for that 😍🀀 sizzle) . Hot chocolate is almost a seasonal requirement when the snow flies! ❄ . But as I've been saying this week, it's typically high in sugar so it's important to read labels and keep things balanced over the rest of the day. .
